Veggie Wednesday

Creamy Bow Tie Primavera

8 oz. bow tie pasta, uncooked
1/2 c broccoli florets
1/2 c cauliflower florets
1/2 c sliced carrots
1/4 c each diced red and yellow pepper
1 pkg. (8 oz.) cream cheese-cut into cubes
3/4 c milk
1/4 c Parmesan cheese-grated
1/4 c chopped green onions
1/2 t Italian seasoning
1/4 t garlic powder

Prepare pasta as directed on package, adding broccoli and
carrots to water during last 5 minutes of cooking time.
Drain. Stir cream cheese, milk, grated topping, onions
and seasonings in large saucepan on low heat until smooth.
Add pasta and vegetables; toss lightly.

Darn! I needed a meatless dish for Ash Wednesday and this would have been perfect, but I have lots of meatless Fridays during Lent to try out this dish.

A nice easy dish to make and sounds delicious. I will have to make a note of this one.
