Pepperidge Farm Swirl Breads


Who doesn't love Pepperidge Farm Swirl Breads? Here's the thing, if you loved it before, you'll
love it even more now with a new wider slice and more cinnamon! For now it's Cinnamon Swirl and
Raisin Cinnamon Swirl, but let's cross everything we've got that this will soon include the
seasonal breads, as well!

To celebrate this new yumminess Pepperidge Farm is sharing this delicious recipe. I made mine with plain cream cheese and raspberry preserves, but check out the end of the recipe for alternatives!



Pepperidge Farm Swirl Bread French Toast Waffle Sandwiches
Prepares 4 Sandwiches

Ingredients

8 slices   Pepperidge Farm Swirl Bread
8 oz.  Cream Cheese
8 tablespoons    Jelly or jam of your choice
1/2 cup  Milk
5 each   Eggs
1 teaspoon   Vanilla
½ teaspoon  Cinnamon

Method

1. Preheat a waffle iron according to manufacturer’s directions
2. Divide Pepperidge Farm Swirl Bread slices, spread cream cheese on half of the slices, and jelly on the other half then combine into sandwiches.
3. In a shallow bowl, whisk the eggs until the yolks and whites are thoroughly combined, add milk, cinnamon, and nutmeg and whisk to combine.
4. Dip the sandwiches in the egg/milk batter and allow to soak for 30 seconds.
5. Spray waffle iron with non-stick spray, place sandwiches in waffle iron, close lid and cook for 3-5 minutes or until golden brown.
6. Remove sandwiches from toaster and serve with maple syrup or your favorite yogurt as a topping.


Alternative Fillings: Banana with Hazelnut Chocolate Spread, Cream Cheese and Strawberries, Peanut Butter and Banana, Ham and Swiss Cheese, Apple slices and Cheddar cheese

Quiche Feast!

I've been making quiche for over 20 years (yes, I'm really that old) and it never gets boring. In fact, the combinations of fillings are limitless and I don't think I've ever had a quiche I didn't like. Now, if you have "real men" who won't eat quiche, call it something else ... Sausage and Egg Pie for example.

What you want to do is start with good ingredients. These pies were made with King Arthur flour (they're celebrating 225 years this year!) and Cabot cheeses. Two of the very finest you'll find. Make sure you par-bake your crust, and go slow - a rushed quiche will puff and crack and that's just not pretty at all. Use milk if you like, I used heavy cream this time. Cheese should be shredded as fine as possible for best results.

Here are two excellent examples of quiche that are sure to please just about everyone.

This is the beautiful crust I used for both quiche. Buttery and cheesy and flaky - it's a divine vessel for delicious fillings!

Cheesy Pie Crust
Makes two 9-inch pie crusts

2 sticks cold unsalted butter - cut into small cubes
1 cup shredded Cabot Extra Sharp Cheddar Cheese
1/2 teaspoon salt
2 to 2 1/2 cups King Arthur All Purpose Flour
1/4 to 1/2 cup ice water

Directions:

Combine flour and salt in a bowl and set aside. 
Add butter, and cut in until mixture resembles coarse meal 
Drizzle 1/4 cup water evenly over mixture. 
Work together until mixture just begins to hold together (dough should not be wet or sticky). If dough is too dry, add more water, 1 tablespoon at a time,  Add cheese and combine well
Shape dough into 2 disks, and wrap each in plastic wrap. Refrigerate until chilled, about 30 minutes or overnight if needed. 
Roll and bake as directed.



This is the correct chorizo for this recipe. Bulk chorizo will add a different texture.

Chorizo and Hatch Chile Quiche

This one if for the guys! Spicy and full of flavor, they won't know it's a quiche unless you tell them!

Chorizo and Hatch Chile Quiche
Makes one 9-inch quiche

Ingredients:

6 large eggs
1 c heavy cream or milk

1/2 teaspoon Kosher salt
2 chorizo sausages diced

1 large hatch green chile, roasted, seeded and chopped (mine are from the Hatch Chile Store)
2 tablespoons finely chopped cilantro
2 c shredded Cabot Monterey Jack Cheese
one 9-inch pie shell - I used a springform pan - see recipe for Cheesy Pie Crust.


Directions:

1. Bake pie shell until lightly browned in a 400 degree F oven. Turn heat down to 350.
2.Cook chorizo in a small pan until browned. Drain well and pat on paper towels.
3. Blend eggs, cream and salt together until well combined. Place the chorizo, cilantro and chiles into the bottom of the pie shell. Top with cheese.
4. Pour the egg mixture over all. Bake until puffy and very lightly lightly browned and eggs are set, about 35-40 minutes.

5. Cool for 15 minutes before cutting.



Smoked Salmon and Asparagus Quiche before baking

Cabot's Garlic and Herb Cheddar is so delicious in this! It adds just the right amount of herb and flavor.


Smoked Salmon and Asparagus Quiche
Makes one 9" deep dish quiche


Ingredients:


6 large eggs
1 c heavy cream or milk

1/2 teaspoon Kosher salt
8 fresh asparagus spears
4 oz smoked salmon- chopped
2 c grated Cabot Garlic and Herb Cheddar Cheese
one 9-inch pie shell - I used a fluted pan with a removable bottom - see recipe for Cheesy Pie Crust

Directions:


1. Bake pie shell until lightly browned in a 400 degree F oven. Turn heat down to 350.

2. Cut asparagus spears into lengths that will fit in a pinwheel design in the pie pan - about 4-inches long. Chop remainder of spears into smaller sizes.
3. Blend eggs, cream and salt together until well combined. Place the salmon, asparagus cuts  and cheese into the bottom of the pie shell. Arrange longer asparagus lengths into a pinwheel design on top of the cheese. 

4. Pour the egg mixture over all. Bake until puffy and very lightly lightly browned and eggs are set, about 35-40 minutes.
5. Cool for 15 minutes before cutting.

Tortilla Española

Tortilla Española is a traditional Spanish dish served at many local restaurants and bars in Spain. Served hot or cold it's delicious either way. The oil may seem excessive, but is necessary for the true flavor of the tortilla. Honestly, don't freak out about it, you'll be blissfully unaware after your first bite!

Hands-On Time: 15 minutes
Ready In: 45 minutes
Yield: 12 as an appetizer, 6 as a meal

Ingredients:

1/2 cup Olive Oil
1 1/2 pounds Yukon Gold Potatoes or other waxy potato, peeled, quartered and sliced thinly
1 medium sweet onion, such as Vidalia, thinly sliced
1 1/2 teaspoons salt
6 whole eggs
1 teaspoon smoked paprika
Freshly ground pepper to taste

Directions:

1. Heat the oil in a 10-inch nonstick skillet over low heat, add the potatoes, onions and salt and cook, turning often, for 25 minutes or until vegetables are tender but not browned.
2. Drain potatoes in a colander over a bowl. Drain as much oil as possible and reserve 2 tablespoons of the cooking oil.
3. Beat eggs well and add paprika, salt and pepper. Pour hot potatoes into eggs and stir well.
4. Put the 2 tablespoons of oil back into the same skillet and pour in the potatoes and eggs.
5. Turn heat to medium and cook until eggs are nearly set on top, 5-7 minutes.
6. Put a large plate facedown over the skillet and invert the tortilla.
7. Slide the tortilla back into the skillet, uncooked side down, and cook for another 3 minutes.
8. Slide tortilla onto a plate and cool for several minutes before cutting.

That's right ... heart attack on a plate. Now, I don't mean to cause anyone harm or ruin your health, but we don't eat this way every day. I think saving something like this for once in a while is just fine. After all, my grandma lived to 97 on this type of food and a happy heart.

All kidding aside, if you're going to eat something bad for you, do it right, just don't do it often. This recipe calls for real butter, real sausage, real bacon and real milk - and I don't mean the skim kind. If you really need to you can go for turkey sausage and turkey bacon, just please don't use margarine for those biscuits, they really won't taste the same.

Cut butter into small cubes - about 1/2" each and add to flour, baking powder and salt mixture.


Add crumbled bacon - about 8 slices will yield 1/2 cup.


The best way to get the butter into the flour mixture is to rub it in with your hands. You can use a fork or pastry cutter, but you won't be able to feel if there are larger lumps of butter left. 


Once the milk is added and the dough comes together it needs to be kneaded. About 5 folds and turns should do it; the less you handle the dough, the more tender it will be. When the bacon bits pop out of the dough (they will!)  make sure you push them back in there, you don't want to lose any of it. 


Roll or press dough into an 8-inch circle - even if it doesn't look like a circle when you're done.


Score and then cut dough into 8 even wedges.


Put wedges on a greased pan or use silicone as above. Bake at 400 degrees F for 15 - 21 minutes.


Baked and risen bacon biscuit wedges. Let cool briefly before splitting. 


Cook sausage until no longer pink. Add flour and stir well until no dry flour is visible. Add milk slowly, 2 cups first then stir until it starts to thicken. Add remaining milk one cup at a time until thickened as desired.


Add as much black pepper as you like - we like 2 teaspoons for our double batch.



Around here we double the recipe and each person gets 2 biscuits and a bucketful of gravy.

Sausage Gravy and Bacon Biscuit Wedges
Serves 4

For the Bacon Biscuits

Ingredients:

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup cold butter cut into 1/2-inch cubes
1/4 cup bacon crumbles - about 4 slices
1 cup milk or buttermilk


Directions:

1. Combine flour, baking powder and salt together in a medium mixing bowl.
2. Cut in butter and bacon until mixture resembles large crumbs.
3. Add milk half a cup at a time until a soft dough forms.
4. Knead dough about 5 turns and folds - less is better.
5. Form into an 8-inch disc and cut into 8 even wedges.
6. Bake in a 400 degree F oven for 15-21 minutes or until risen and lightly browned.

For the Sausage Gravy

Ingredients:

1 pound bulk breakfast sausage
1/3 cup all-purpose flour
3 cups milk
1 teaspoon freshly ground black pepper


Directions:

1. Cook sausage in a medium heavy-bottomed saucepan until no longer pink.
2. Add flour and stir well until no dry areas are left.
3. Add milk, 1 cup at first, and stir until it begins to thicken.
4. Add remaining milk a cup at a time until the gravy is the consistency you like.
5. Taste for seasoning and add salt if you like.
6. Add pepper and stir well. Serve over bacon biscuits cut in half lengthwise.

Cinnamon Rolls

Please excuse the quality of my photo - I haven't had time to set up at the new house! You get the idea.

I've been baking cinnamon rolls for years and years ... and years. For some odd reason I never thought to add them to my blog. I just never felt they were overly special and figured everyone already had a recipe. Well, I do like mine and I think the vanilla pudding mix added to it really adds flavor.

Cinnamon Rolls

Dough:
 
1/4 cup warm water
1 packet dry yeast
1 Tablespoon granulated sugar
1/2 teaspoon table salt
4 cups all purpose flour
1/2 package instant vanilla pudding mix (3.4 oz. package)
1 cup warm milk
1/4 cup butter - softened
1 large egg - lightly beaten


Filling:

1 cup packed light brown sugar
1 Tablespoon ground cinnamon
1/4 cup butter - melted


Cream Cheese Cinnamon Icing:

4 ounces cream cheese- softened  
1/4 cup butter - softened  
1/2 teaspoon vanilla extract
1/2 Tablespoon milk
1 1/2 cups powdered sugar
1/2 teaspoon ground cinnamon


1. Combine warm water, yeast and sugar together and let stand for 5 minutes. If mixture is bubbly proceed with the rest of the recipe.
2. Add salt and 1/2 cup of flour to yeast mixture and blend well.
3. Pour in milk, butter, pudding mix, egg and 1 cup flour and start blending in a stand mixer or with a hand blender.
4. Once smooth add remaining flour 1/2 cup at a time with a wooden spoon or dough hook attachment until flour is incorporated.
5. Run on medium speed for 5 minutes with a dough hook or knead by hand for 8-10 minutes or until dough is smooth and elastic.
6. Cover with plastic or a bread towel and let rise until doubled in bulk - about 1 hour.
7. Roll dough into a rectangle about 15 inches by 24 inches (or follow instructions HERE for "Sunshine Bread").
8. Spread dough with melted butter then sprinkle with sugar and cinnamon. Roll up from the long side and seal.
9. Cut into 12 equal pieces and place in greased round pans. Press down on each roll slightly to help them bake into the proper shape. Cover with plastic or bread towel and let rise again until double in bulk.
10. Bake for 15-20 minutes in a 350 degree F oven until golden brown and puffy.
11. Spread with icing if desired.

Cream Cheese Cinnamon Frosting:
In a small bowl, mix cream cheese, butter, vanilla and milk. Add powdered sugar and cinnamon and mix until smooth. Spread on warm rolls and serve immediately.

Mother's Day is almost here! What is the mom in your life eating this Sunday? Breakfast at a restaurant? Brunch at home? How about breakfast in bed with these delicious little pancakes?

These quick pancakes are full of flavor. A burst of bright lemon is infused in each bite and the deep red raspberry preserves on top add extra flavor. Simple enough for a weekday breakfast but special enough to serve to guests, these fluffy pancakes are a favorite in our house.

I've even made these at work for my clients and they are always met with rave reviews and the plates are empty and tummies full. Give them a try and, as always, let me know how you liked them!


Lemon Ricotta Pancakes with Raspberry Preserves
Printable Recipe
Hands-On Time: 20 minutes
Ready In: 20 minutes
Serves: 4

Ingredients:


Zest of 1 lemon - about 1 Tablespoon
2 Tablespoons granulated sugar
2 cups flour
1 Tablespoon baking powder
1/2 teaspoon salt
1 cup whole milk ricotta cheese
2 eggs
1/2 to 1 cup milk or buttermilk
1 teaspoon vanilla extract
1 cup red raspberry preserves, with or without seeds, whichever you prefer


Directions:

1. Combine lemon zest with sugar and rub together with your fingers until fragrant and moist. Set aside.
2. Stir together flour, salt and baking powder, set aside.
3. Blend eggs, milk, ricotta and vanilla. Fold lemon and sugar to wet ingredients. Add to dry ingredients and mix until just combined. Batter will be slightly lumpy.
4. Drop by 1/4 cupful onto a hot griddle and cook until bubbles appear on the surface of the pancake. Turn and cook for 1 minute longer. Set aside and keep warm until all pancakes are cooked - there will be 12 - 14.
5. Heat preserves until smooth and liquid. Plate pancakes, 3 to a plate, and top with 1/4 cup of preserves.

*Note: For a faster version you can use 2 cups of instant pancake mix and 1 1/4 cups of water in lieu of the pancake batter.

Quiche is delicious any way you slice it, but spring veggies like leeks and asparagus make it even better. Lightly sauté the asparagus to bring out even more flavor. Change the cheese to anything you like if Swiss is too heavy for your palate, and use green onions in place of the leeks if desired.

Asparagus and Leek Quiche

Hands-On Time: 10 minutes
Ready In: 60 minutes
Serves: 8

Ingredients:

1 pie crust
3 large eggs
1 1/2 cups light cream
1 teaspoon salt
1/4 teaspoon white pepper
4 ounces Swiss cheese - shredded
2 Tablespoons olive oil
1 leek - split lengthwise and rinsed well to remove sand and grit
8 spears asparagus cut in 4-inch lengths

Directions:

1. Preheat oven to 400 degrees F.
2. Fit pie crust into an 8-inch pie pan and crimp edges. Weight with beans or other pie weights and bake for 10 minutes. Remove weights and set aside.
3. Beat eggs until light and lemon yellow in color. Stir in cream, salt, pepper and cheese.
4. Slice leeks thinly and cook in olive oil over medium heat until limp. Add asparagus and cook for another 5 minutes until spears are crisp-tender.
5. Pour half of the egg mixture into the par-baked crust and bake for 10 minutes.
6. Top baked egg mixture with asparagus spears, fanning them out from the center like the spokes of a wheel. Sprinkle with cooked leeks and top with remaining egg mixture and put back into the oven.
7. Bake for an additional 30 minutes or until top is puffy and set. Cool for 10 minutes before cutting.

Once again, I'm still here. Just in case you were worried. Life has gone and taken a complete 180% turnaround, though, and that's good. That's very good.

I've moved again recently and am still getting settled. I'm pretty sure that will take the next year or so, but the kitchen (the most important room in the house) is almost finished and getting quite the workout already.

I made these savory breakfast rolls today and the kids devoured them almost before I could grab a couple good ones for photos. Luckily for you, I was quick enough. The recipe is sort of whatever you'd like as a filling, but I'll tell you what I did and you can change it up to your heart's desire. I made one batch with sausage and bacon and the other with sausage, bacon and peppers.

Makes 8
Printable Recipe

One batch of biscuit dough for 8 rolls (or a can of 8 LARGE biscuits)
2 Tablespoons butter - melted
8 ounces breakfast sausage cooked and diced
4 ounces bacon cooked crisp and crumbled
1 cup prepared Alfredo sauce
1 cup shredded cheddar cheese

 Heat oven to 375 degrees F Roll biscuit dough to a 12 x 8 rectangle.
Spread with butter followed by 3/4 cup Alfredo sauce.
Sprinkle evenly with sausage, bacon and cheese.
Roll up from short end and cut evenly into 8 slices.
Place into a round baking pan that has been lined with parchment or otherwise greased.
Flatten each roll slightly.
Bake for 20 - 25 minutes or until golden brown.
Cool for 5 minutes and top each roll with remaining Alfredo sauce.

*If using peppers or peppers and onions, dice small and cook first until soft. Use approximately 1/2 cup.Add with meats and cheese.

I'm not sure where the title of this recipe came from, but if you've ever had an Entenmann's Ultimate Crumb Cake, this is nearly identical to it. Dense crumbs top a moist, buttery cake and the result is pure joy.

This uses a boxed cake mix and margarine - both taboo these days, it seems - but we so enjoy this cake that I make it with both anyway. There's no reason to eat a whole cake in one sitting, and if you stick to one piece (I dare you!), then you're not ruining your health completely.

I know I found this online somewhere about 11 years ago, but I didn't save that information and I'm clueless as to the author. There are different versions of this floating around, though, so I don't feel as if I'm stepping on any toes. Whoever you are, here's to your delicious creation.

Butter, Sugar and Vanilla
Look at all that butter, cinnamon, sugar and vanilla.

Makes one 11x15 cake
Printable Recipe

1 pkg Duncan Hines Butter Cake mix (or any other brand)
4 large eggs
2/3 cup milk
2/3 cup vegetable oil

Preheat oven to 350 degrees F.
Blend together until lumps disappear - do not over mix.
Bake in a greased 11x15 jellyroll pan for 20-25 minutes.

Crumb Topping:

4 cups flour
2/3 cup sugar
2/3 cup packed light brown sugar
1 Tablespoon cinnamon
1 Tablespoon vanilla extract (I used Floridian Gourmet [see photograph] which is sadly out of business now, but his newest endeavor is HERE - this guy knows his stuff!) 
2 sticks of margarine
1 stick of butter

Melt butters and let cool slightly. Add vanilla.
Mix flour, cinnamon, sugars then add the liquid mixture.
Crumble with hands and place on warm cake. Bake again for 20 min at 350 degrees F.
Let cool and dust with powdered sugar.

Chocolate Gravy

I just finished off a plateful of Saveur 100's #48 - Chocolate Gravy with biscuits. It was hard for me to imagine a breakfast that combined a rich, velvety, buttery chocolate sauce as a component (unless I were a 5 year-old), so when I first saw the recipe I was intrigued.

In our home savory has ruled as the Queen of Breakfast and every one of my 7 children knows that I don't embrace the idea of chocolate or sugar as the first meal of the day. But, the recommendation did come from Saveur, and the woman who submitted it is from the South, so I figured it had to be good. And I was right. And I apologize to my children for denying them chocolate for breakfast for so long.

I think I'm in love - the dark chocolate sauce on top of flaky biscuits is nearly sinful. I'm not sure I should have been making it for Sunday breakfast. I did, though - and I don't apologize for it. This recipe is adapted from the Raspberry Corn Muffins in the Earthbound Farm Organic Cookbook, Food to Live By. Please purchase the book to see that and other wonderful recipes by Myra Goodman.

This makes a moist muffin that is not quite as moist the second day. Either way, they are delicious!

Blueberry Corn Muffins
Makes 18 regular size muffins or 9 larger
Printable Recipe

1 1/2 cups all-purpose flour
1 cup cornmeal - I like regular grind for texture
1 Tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon freshly grated nutmeg
2 large eggs
3/4 cup packed brown sugar
1/2 cup olive oil
1 cup sour milk (1 Tablespoon lemon juice and enough milk to make 1 cup)
1 pint fresh blueberries - washed and dried

Preheat oven to 400 degrees F and place cupcake liners in 18 muffin cups.
Combine flour, cornmeal, baking powder, salt and brown sugar. Blend well. Make a well in the center and add eggs, oil and milk. Stir until there are no more lumps. Add blueberries and fold in. Fill muffin cups 2/3 full and sprinkle with coarse sugar. Bake for 20-25 minutes or until tops of muffins spring back when touched.

Bacon in the Budget

Bacon is quickly taking on a role as the new chocolate as of late and I'm on that wagon, for sure. Bacon lovers are coming 'out of the closet' with a fervor and I'm more than happy to join the ranks of newly outted pork belly fanatics whether it's PC or not.

However (come on, there has to be a 'however' here) bacon is expensive and not-so-good for a person's health. What to do? Bacon ends. I'm not talking the fat-only type, and don't let your butcher get away with handing that to you, I'm talking the kind with a good amount of meat still on them and all the flavor of the more picture-perfect slices. There are many areas where you can actually purchase boxes of bacon ends for your freezer. If you don't have that available, ask at the meat counter.

Here's the health part; it doesn't take a lot of bacon to get a good bacon flavor. Take those ends and cook them up until crisp. Drain well and crumble into bacon bits. While you're at it, save the bacon grease for other uses. Strain out the cooked bits of bacon and freeze the leftover drippings in small containers. It only takes a tablespoon or so to add flavor to soups, stews, casseroles and gravies.

This recipe is for Bacon Pancakes. In a family as large as ours, the bacon budget can get out of hand rather quickly. To have all the flavor without all the cost, try crumbling bacon right into the pancakes as they cook. Everyone in the family loves these.

Bacon Pancakes
Serves 4
Printable Recipe

1 recipe pancake batter (use whatever you really like - my favorite is still the BH&G New Cookbook basic recipe)
1/2 pound bacon cooked crisp and crumbled

Ladle pancake batter onto hot griddle in the amount desired (1/3 cup works well) and top with crumbled bacon. Flip when bubbles appear on surface of pancake and edges are dry.


You can always mix the bacon right into the batter, but I find that the bacon that rests on the bottom of the pan gets too done that way.

Italian Eggs

What makes these eggs "Italian"? A movie! Moonstruck, to be exact. There is a scene in Moonstruck where Cher's character is making breakfast and she hollows out a slice of bread, tosses it in a frying pan and adds an egg to the hollowed out center. From the time I first saw that movie (long time ago!) I've been making this particular variation of those eggs.



Start with a nice large loaf of Italian bread and cut into thick slices.


Hollow out the center of each slice. Heat some oil in a heavy frying pan and add the bread.


Add an egg to the center of each slice of bread. Do this slowly so the egg begins to set and doesn't flow out from underneath the bread. Cook until the bottom of the egg is well set.


Flip once and allow to cook for a few minutes longer.


Top with mozzarella cheese and lid the pan for a few minutes until the cheese melts.


Voila! I sometimes add Mrs. Dash Garlic & Herb to the top of the eggs for extra flavor.
