Italian Eggs

What makes these eggs "Italian"? A movie! Moonstruck, to be exact. There is a scene in Moonstruck where Cher's character is making breakfast and she hollows out a slice of bread, tosses it in a frying pan and adds an egg to the hollowed out center. From the time I first saw that movie (long time ago!) I've been making this particular variation of those eggs.



Start with a nice large loaf of Italian bread and cut into thick slices.


Hollow out the center of each slice. Heat some oil in a heavy frying pan and add the bread.


Add an egg to the center of each slice of bread. Do this slowly so the egg begins to set and doesn't flow out from underneath the bread. Cook until the bottom of the egg is well set.


Flip once and allow to cook for a few minutes longer.


Top with mozzarella cheese and lid the pan for a few minutes until the cheese melts.


Voila! I sometimes add Mrs. Dash Garlic & Herb to the top of the eggs for extra flavor.

  5. Some people call them "Toad In The Hole". Growing up, we just called them "Egg Things". :)

  7. Hubby calls this "Egg in a hole" but not on Italian bread or with cheese. Sound yummy, and I just got 2 nice loaves of Italian bread this morning!

  8. No, not good for you - but GOOD! Annie, we call Toad-in-the-Hole sausages in Yorkshire pudding - in fact, I've posted about that before. Good stuff.

  9. I've seen that movie, love it, and even recall that scene... but it never occurred to me to pay attention to what Cher was doing with those eggs!

    This just looks plain fun to make. I bet my kids will love it.

  11. From doing a quick search, apparently a lot of people make "Moonstruck Eggs" but like Lori I don't remember that from the movie. And I did like that movie, very much. And now I've had "That's Amore" stuck in my head for 5 minutes. :P

    I am definitely going to try this next time I make eggs. Seriously.

    I wonder if this would work well with sausage bread...

  17. "Moonstruck" is one of my favorite movies, and I've been making Moonstruck Eggs for my family ever since the movie came out. We love them!

  28. It's probably politically incorrect somewhere, but we've always called these one-eyed sailors. I have photos of my middle son showing my teen how to make them. I love it. You're are fancy compared to theirs which use regular sandwich bread. Mrs. Dash is a great idea too!

  31. Moonstruck! I actually love that movie. I don't know many other guys who do but a good movie. I love near the end when the old man says "I am so confused". A great line.

  33. Yes, I love these eggs too. And I also starting making them after seeing Moonstruck.

    Just one small correction. In the movie it is Olympia Dukakis (she plays Cher's mother) who is making the eggs.
