Veggie Wednesday

Veggies and fruit in one of my favorite combinations.

Classic Waldorf Salad

Created at New York's Waldorf-Astoria Hotel in 1896 by the maître d'hôtel, Oscar Tschirky.

1 cup apples chopped
1 tablespoon lemon juice
1 cup celery, chopped
1/4 cup mayonnaise
1/4 cup raisins (optional)
1/4 cup walnuts (optional)

Sprinkle chopped apples with lemon juice.
Add all other ingredients.
Toss to coat all pieces with mayonnaise.

Serves 4 as a side.

  2. I like fresh halved grapes in place of rasins.

    When I'm feeling festive I'll toss in a small (drained) can of mandarin oranges.

    June, me too on the grapes. I don't really like raisins except plain so I leave them out.

  5. I love Waldorf Salad, raisins and all, but no one else in my family does. I should make a small batch and take it with me for lunch at work! Thanks for the flashback!

  7. Yep, I love to add grapes instead of raisins and when I'm *really* hungry, I add cubed chicken and cheddar cheese. Um, I guess that's no longer the classic Waldorf, though, is it? LOL
